On the day of Gudi Padwa, many households plan a feast of Shrikhand and Puri. This menu featuring delicious Shrikhand paired with piping hot Puris truly comes alive only when accompanied by a savory side dish of boiled potatoes. Consequently, the combination of Shrikhand, Puri, and potato curry is a common sight in many homes on Gudi Padwa.

However, the challenge is that many cooks struggle to capture the authentic flavor of this potato dish. They often feel that their preparation is lacking something—that the flavor profile falls just a little short. If this sounds familiar to you, let's take a look at how to prepare the perfect boiled potato curry. 

Recipe for Boiled Potato Curry

4 to 5 medium-sized potatoes and 2 onions

5 to 6 green chilies

Grated ginger and crushed garlic cloves

Finely chopped coriander leaves and 5 to 6 curry leaves

For the tempering (Tadka): Oil, mustard seeds, cumin seeds, asafoetida (Hing), and 1 teaspoon of Urad Dal (split black gram)

Salt to taste and a pinch of coriander powder

Instructions

  • First, thoroughly boil the potatoes. Peel them once cooked, and then cut them into medium-sized cubes.
  • Place a pan (Kadhai) on the stove over medium heat. Add the oil, mustard seeds, cumin seeds, asafoetida, and curry leaves to prepare the tempering. Next, add the Urad Dal and saute it until it turns aromatic and golden brown. Finally, sauté the chopped onions over medium heat until translucent.
  • Next, add the finely ground green chili paste, along with ginger paste and garlic, and sauté the mixture. While sautéing these ingredients, take care to ensure that the onion, garlic, and ginger do not burn or acquire a scorched smell.
  • After this, add turmeric powder, cubes of boiled potatoes, coriander powder, and salt to taste. Stir the entire dish thoroughly, then cover the pan with a lid. At this stage, keep the flame on a very low setting.
  • After 6 to 7 minutes, give the dish a stir, cover it again, and let it steam for another 1 to 2 minutes. Finally, turn off the gas and garnish with fresh coriander leaves and grated coconut. Your delicious potato dish is ready give it a try!
